Our Story
Located in the south of Tuscany, in the heart of the Maremma, our Olive Grove uliveto has been in our family for the past twenty years. Looking after the olive trees after years of neglect has become a labour of love, which has seen the trees back to their fruitful selves! We are proud to be the next generation to look after them and to produce our great quality, single-source, cold pressed Extra Virgin Olive Oil.
The Trees
All 435 trees are well over 100 years old. This makes them more hardy, resistant to disease and extremes of weather. They comprise three varieties, Morailolo, Leccine and Frantoiano, all local and perfectly adapted to thrive on our hillside under the Tuscan sun. Depending on the weather each year, the conditions favour one variety over another. This type of olive grove is the most traditional type of olive cultivation in the world - rain-fed, grown on a moderate slope with fewer than 180 trees/hectare, without use of any fertilisers or chemicals.
Production
In keeping with tradition, the olives are hand-picked, with no mechanical tools or shakers, to avoid bruising. We pick in early October each year, to ensure the oil has a strong, piquant flavour due to the antioxidants present in early-harvest olives. Once picked, the olives are taken to the local cooperative press in Pomonte where they are pressed within 24 hours. The olives, with the pit, are cold-pressed at <27°C. This oil is unfiltered to retain all the polyphenols and nutrients within.
